+1 for Debian Stable. +0.8 for Fedora/RHEL. Debian stable has good security patches turn around. Much more stable than Ubuntu server ed. Fedora is also quite stable, but apt (Debian) is a much better package management system than Fedora's yum (it probably doesn't matter much for server since you probably won't change your package set often).
