I want to create a mirror vdev with a couple high capacity drives, move my data over to this mirror vdev, then replace the existing vdev (raidz2). I want to ultimately migrate from raidz2 to raid10. Can you not add a mirror vdev to a zpool that has a single raidz2 vdev? I've never tried this with zfs, which is why I'm asking. I know you can do something similar to this in Linux LVM and software raid.
