mirror vdev with a couple high capacity drives, move my data over to this
mirror vdev, then replace the existing vdev (raidz2). I want to ultimately
migrate from raidz2 to raid10. Can you not add a mirror vdev to a zpool
that has a single raidz2 vdev?

Correct. You can do what you describe by creating a second zpool and doing
a zfs send to it. With smartos you will have to do this in single user mode
becuse the vmadmd will not like having everything moved on it.

As far as I recall as long as you end up with a pool called zones in the
end that has all of the same data as the original zones the smartos host
will boot up correctly. I cant say that I have tried it though
