You can do what you describe by creating a second zpool and doing a zfs send to it. With smartos you will have to do this in single user mode becuse the vmadmd will not like having everything moved on it.
As far as I recall as long as you end up with a pool called zones in the end that has all of the same data as the original zones the smartos host will boot up correctly.
