I’m probably going to pick up a bunch of SAS drives soon (whatever Keith says 
is the right thing to use in the manufacturing data, naturally :)) and 
(hopefully) add new mirror zvols

(a la zpool add zones mirror newDisk1 newDisk2 run n times)

That brings up two questions. Firstly, will that procedure work?

That depends on your definition of work.  Don't do it!

   Secondly, if I want to vacate the existing raidz1 zvol so that I can remove 
those four disks and replace them with a pair of mirror vdevs, is there a 
supported way to do that online?  If I can avoid downtime, that’d be most 
awesome.

Create a new pool with the new drives and zfs send everything over to it. You'll then have to boot into a no install session to export the current pool and import the new one as "zones".
