When I two finger tap (right click) on the Trash, I have 'Empty Trash'. I have to do a Command + two finger tap to get 'Secure Empty Trash'.

Go to finder preferences->advanced and uncheck the option to empty trash securely.

Thanks for your help. I'm not trying to hide anything! I just wanted
to clear the space and it only gives me "secure empty trash" as an
option in Finder. However prompted by your reply I did a "find" which
points to "Empty Trash" with same command preceded by a circumflex.
Can you tell me how/where I get that please? Thanks.

Why are you doing a secure empty? As you probably know, that writes lots of zeros over everything it empties, and repeats this several times over.

If you just want to trash stuff, do an ordinary empty.

Doing a secure erase won't stop the police reconstituting your erased files, as Ray, their uneraser in chief, will tell you!

I have a lot of stuff in my Trash. I'd like to clean it out but each
time I do a "secure empty trash" it seems to go at such a snail's pace
that I eventually give up. Is there a way of doing it in small bites
or is there another way to speed the process please.
