Hi Jason, When we were travelling around Europe it was pretty easy to get hold of Sims in most places, including France. Just rock up into any town centre and the usual 2 or 3 mobile shops should be offering pay as you go Sims.
Sorry, I can't remember what plans there were available and it was nearly 3 years ago but I can't imagine it has got harder to get yourself sorted. We were using the iPad (V1) all the time when travelling but also had iPhones. Both we managed to get sorted. You would lose the use of your UK number whilst in France. Bon voyage...
