I have been doing the same thing for about a year now.  Location (Latitude
and Longitude) and altitude data was obtained by mounting a handy GPS
(Garmin e-Trex Vista) in my plane.  Acquired data was processed using
Kashmir3D software.  Its available as a free ware at
http://www.kashmir3d.com/index-e.html.  You need to buy a digital map
though.
By using Kashbird, an image processing software which come with Kashmir3D,
you can take still photos.  Kashmir3D also has movie making capabilities,
enabling you to sit inside the cockpit of your plane and experience virtual
flight.  I have an introductory how to article of this in the current issue
of R/C Technique magazine, which is the most widely read R/C magazine in
Japan.
If  you have friends into paragliding, they seem to do this GPS & PC imaging
a lot.  I am sure they can guide you to an English source for all this.
