Depends on the application. We always used solder connections in wind tunnel instrumentation unless a solder connection couldn't be used. About the only time we used plugs was with auxiliary balances that had to be installed and removed many times during a test. When plugs had to be used, we took extra care taking setup data and checks every time the balance was re-installed. I have been retired for 10 years but I haven't heard of any miracle plugs that have become available in recent years so I assume they are still doing it that way. Will have to ask the next time I run into one of my old instrumentation engineers.
