I am learning about linux.  What did you use for your linux distro ?
Is there a doc/faq somwhere that can walk me through this kind
of setup ?

Ron,

There's probably windows ports of SA, but I'd say if you can do so stick
a box running some form of *nix with an MTA like Postfix, passing mail
to spamassassin for scanning/tagging before relaying it to the Exchange
box.

Takes a little setting up, or did for me as I had no linux knowledge,
but now it's done and I'm amazed how much it can do for the effort it
took to learn how to do it!
