look at putting in an email gateway machine between the internet and Exchange server. If you use MailScanner or amavis-new to wrap around SA and the MTA you can also include virus scanning in there as well.

We use MailScanner (as do a lot of people), but amavis-new is an alternative.

I'm sure you'll be able to pick up some local who can help you install this, or contact the MailScanner mailing list...
