Take a look at 8.8.4.1.1.4 (2007), you should be fine so long as you don't
start getting into unprotected ceiling pockets....

What's the difference in vertical height between the "flat" ceiling and the
high point of the "curved" ceiling?

Subject: ceilings with varying degrees of slope

Good morning all,
We have a situation where there are multiple sections of ceilings that start
off flat/level for several feet and then curve upwards with a pitch that will
exceed 2:12 at some point in the curve. This situation occurs in a repeating
pattern over a large section of floor area. At the top of the curve there is a
small slot that serves as a return air opening. The design intent was to use
concealed, quick response, ordinary hazard, extended coverage sprinklers
located in the flat part of the ceiling. The question is "this a flat
ceiling?". Does the portion of the ceiling that exceeds 2:12 nullify the use of
the flat ceiling design?
