I've been involved with sprinklers that operate in MRI rooms causing significant damage when hot, moist air accidentally comes out of heating equipment through diffusers... Without knowing all of the conditions and the equipment arrangement and so on I'm just sayin'... be safe, put in the sprinklers with the temperature rating above the maximum ambient temperature as required by the tables in the Red Book. Steam vapor is visible and somewhat below that. It would cool rapidly in contact with air that is within a human tolerance range. It should be well below 200 before it reaches the ceiling where it will continue to cool as it contacts the sprinkler head and its associated mass. No test but I know enough about steam that if you can see it it's not steam. And released into the atmosphere it does not get hotter, but rather cools.
