Since it can't be physically policed and the homeowner doesn't care so I'm thinking the best course is to post a big sign at the attic access that is a earring to Larry the Cable Guy to not disturb the insulation around the sprinkler piping. At least that way when the owner's lawyer sues and somehow figures it not only your job to do the insulator's work as well as make sure other people don't mess up the insulation from now until the sun goes super nova you at least can say you are aware a problem exists with other trades being stupid and you did the best you could to instruct/warn unnamed people working in the attic at an undetermined future time to be careful.
