Here are the remove and rebuild steps, I've just done and documented as
each step was completed. 

The method I used to scrape LMS out of the system is summarised as:

repeat
    sudo updatedb
    locate squeezeboxserver
    sudo rm -rf 'files reported by locate'
until locate doesn't show any more files. Since then I've built a bash
script containing all the remove commands I used, so if needed again,
repeating it will be a no-brainer.

logitechmediaserver-7.9.2-0.1.1549869508.noarch.rpm is the most recent
RPM in nightly, so I tried to install it: 

$ sudo rpm -i logitechmediaserver-7.9.2-0.1.1549869508.noarch.rpm
        package logitechmediaserver-7.9.2-0.1.1549869508.noarch is
already installed

which doesn't install anything. Running:

sudo rpm -e logitechmediaserver-7.9.2-0.1.1536072399.noarch.rpm
error: package logitechmediaserver-7.9.2-0.1.1536072399.noarch.rpm is
not installed

doesn't seem to fix the situation, so I forced the install:

$ sudo rpm -U --force logitechmediaserver-7.9.2-
0.1.1549869508.noarch.rpm
ValueError: File context for /var/lib/squeezeboxserver/cache(/.*)?
already defined
ValueError: File context for
/var/lib/squeezeboxserver/cache/squeezeboxserver-mysql.sock already
defined
Point your web browser to http://zoogz.gregorie.lan:9000/ to configure
Logitech Media Server.
$ 

and this apparently succeeded in doing a usable install, leaving LMS up
and running. Doing the following:

$ sudo updatedb
$ locate squeezeboxserver

shows all the files I expected to see.  
The three logs that resulted from this are in lmslogs/after_install.

At this point I configured LMS from Firefox, inputting login details as
requested and setting both music and playlist locations to
/home/music/albums. Then I selected 'Finish'. The page turned solid
turquoise with a spinner and "Loading Logitech Media Server..." in the
middle of it.

Eight minutes later nothing had changed on the Firefox page, but my
Touch can see two artists - from the only two albums with usable
playlist entries for the tracks in them. The Touch can select and play
these.

The logs I grabbed at this point are in lmslogs/after_config

The touch can also select and play other music if its selected via the
"Music Folder" menu tree and, interestingly, this adds the artist,
album, and all tracks to the database. Cover artwork is shown
regardless of which route is taken the select an album to be played.
 
Now, 22 minutes after the install, there is no change in the web
display (still all turqoise with spinner and "Loading Logitech Media
Server..." shown. 

The logs, grabbed at this point, are in:
lmslogs/final  

Nothing more seems to have been written to them after LMS was
configured.

Done. The zip archive is called mcg_logs.zip and contains the directory
structure described above, which each of the three branches containing
a snapshot of all three logs at that point.
