After using slimserver and the squeezebox for a few weeks know I figured out what the problem is and where my initial confusion came from.
If you use your remote control to connect to the squeezenetwork on one of your squeezeboxes you will no longer be able to connect to that squeezbox through the slimserver interface. This causes the squeezebox to just stream what ever you choose directly to the squeezbox. If you choose something in the squeezenetwork from the slimserver interface to stream to a squeezebox it sends the stream through the slimserver to the squeezebox and you still can control the squeezebox. This behavior is really annoying for my situation because I control the squeezeboxes exclusively through the slimserver and my wife controls them through the remote. When ever she connects to the squeezenetwork with the remote I have to go to the squeezebox and manually connect it back to the slimserver. Is there a setting to get around this behavior?
