If you run the date command at the command line, is that one hour out? Or
are you only seeing it in the logs/squirrelmail?

You can also verify the NTP is working as follows:

ntpq   -- this will dump you into the ntp query command prompt
ntpq> rv

This will out put a bunch of data. Look for Stratum. If it says 16, you've
got a problem with your NTP setup. If it says 3 or 4 or something like
that, your NTP is good. Type quit to exit back to normal command prompt.

You might want to check out the physical location of the primary server
you're using to synchronize with. Even if it's in the same time zone, it
may be in a region that doesn't follow daylight savings time, or if you're
in a split state, the server may be in another time zone. Indiana, for
example, is a mess.
