You might try bumping up MAXPERIP and/or MAXDAEMONS in Courier IMAP's etc/imapd. What you've got works fine for a medium-size Internet site I administer (though RH RHAS3, not Gentoo). MAXPERIP 60, MAXDAEMONS 10.

I needed to run maildirmake.  I can log in and send email now, but
messages don't seem to be reaching my inbox.  Any tips on
troubleshooting that with courier-imap and postfix?


Is postfix configured to deliver to Maildir? It defaults to mbox format.

If you are delivering to system users (as oposed to virtual users), the ownership of the Maildir needs to be the same as the user that the mail is going to.
