This might seem a little crazy, but have you double checked to make sure
that somehow, a second IMAP server isn't running on just localhost?  It'd
seem remarkably odd for SquirrelMail to just stop like that, especially as
it gets all the information from the IMAP server.  How about this:

telnet serverip 143
A01 LOGIN "username" "password"
A02 STATUS INBOX
A04 STATUS "INBOX.Someotherbox"
A03 LOGOUT

Ran from the server running squirrelmail, and serverip is the same address
that SquirrelMail points to.
