Alan & Jim, I would be interested in following what Dennis might be using for a video card. I can only assume it is NOT a Radeon 7000.
In my research I have found no one who has a G4/800 S900 running in OSX (not to deter you!). Dennis would be a first :) Additional information which may or may not help: The Sonnet G4 / 800 with a Radeon 7000 (retail) would not work with a Atto PCI Express setup (no IDE cards). A Sonnet Trio (no SCSI) was also tried which was a complete failure with both the Sonnet G4 / 450 and the Sonnet G4 / 800. This is using Xpostfacto .17 and no other PCI cards. The only combo which I found works perfectly is a Sonnet G4 / 450 a Radeon 7000 and any Acard based IDE controller.
