You might be in luck.

They just announced the Mac Mini, http://www.apple.com/macmini/ a 1.2ghz for $499. The 1.4ghz model is $599.

I have my first serious case of upgrade fever in years.

And 'upgrade' you will need to .
It comes with only 256mb and officially it's not a user replaceable stick that most will have to pay to replace with a larger one.
At $499 you could just pry open the box on your own and void the warranty.
For running X, it's a deliberate attempt by Apple to make another buck off the customizing option.
It sounds like there is only one DIMM slot.

The design also discourages many current Mac owners who might want to pick one up cheap as an upgrade from old legacy machines and attempt monitor spanning, which isn't possible (only one video port).

Having said that, I wouldn't mind getting one to keep our boys off the tower machines so I can keep a clean desktop and not have to wonder what the heck they've done.
It will also make a great dedicated internet appliance, isolating it from the rest of the network so to speak.
