I think this is due to mail programs like Outlook sending you HTML mail containing CSS style settings that define font, font-size (in px!) and/or color for the <BODY> and/or <P> HTML elements. When you write a reply in SeaMonkey, Semonkey uses these same HTML elements and continues to apply the style settings contined in the quoted mail text.

Being forced to write in the sender's wackyfont/crazysize/garishcolor is a nuisance, to say the least, and I have had some success workíng around it by deleting the beginning of the included quoted mail text (which presumably contains these style settings).
