It's a little trickier than that. Merge fields are "entered" into text in a creative way that requires a script (using the SetField step) to essentially paste the data into the correct spot, making it look like it adds merge fields. What this means is, you can't do what you propose to do.
What you should be able to do, however, is edit the <<Merge Fields>> field in the Setup File to add the names of fields you want to add to the list. This is the field that supplies the values for the value list that pops up in the "Merge Field" field on the Source Code screen. All of this, however, isn't easy, since you have to know what relationship to draw the field from, and include that relationship in the field name. Even with a little time playing with it I still haven't gotten it to work right. Call me if you really need to do this and I can try to figure out how to add some specific fields to the list.
