I have a value list to indicate the type of member--there are several.

The value list appears as a dropdown box and I'd like to change the sequence of categories from top to bottom with the most frequent at the top and so on. If I move them around, will I lose existing entries in that category? That would be a disaster. If I would lose the existing entries, is there some process I can follow to change the sequence and restore the records to the proper category?
Carl's right, you won't lose any data by changing the order of a value list, so long as there are carriage returns between the values in the list.

In the contact by field, the default appears to be UNK. Yet, UNK does not appear on the associated value list (as far as I can tell). I'd like to make email the default and remove UNK. How can I do this?

You need FileMaker and to use the developer login to get access to those features. The default value is specified in the field definition (use the menu File>Define Fields). Note that this will be a revision to a core file which will be lost at your next upgrade and will need to be re-created. It's a minor change so no data will be lost during an upgrade (as it would if you added a new field) so it isn't much of a risk. Keep notes on this kind of change, though, so you can install them after an upgrade.
