THANKYOU very much for this. That's completely fixed it. A total misconception on my part. Coming from IPCop, I assumed the Client section meant it kept track of each client wishing to use the VPN, which is how it appears to work in IPCop, rather than the Pfsense machine being a client itself! Once you pointed it out the inference is obvious. I didn't need to enter a 'local' IP in the extra options box. And to think I always thought the OpenVPN Client section a massive missing piece of all the tutorials I'd read on the subject.
