The DR-680 should be fine with the ST250, with the mic gains switched to 'low'. You can gang the inputs easily, which makes it a nice unit for Ambisonics, although monitoring is a bit hit and miss. I liked mine, but it wasn't physically tough enough for the type of situation that I often find myself in (like last Sunday at Duxford, where torrential rain permeated everything, or a few weeks earlier, standing on the 'Hurricane Platform' at the base of Niagara Falls, and my 788T carried on regardless,) so it had to go. It's got a nice safe home in West Sussex now, where it'll be warm and cosy!
In my opinion, the stock DR-680 was marginally quieter than a stock R-44 (I did get through a lot of recorders in the past eighteen months) but I had my second DR-680 modified by Busman Audio and was most happy with the result: nice clean recordings with a very low noise floor. I'd say that if you're not intending to race or rally the DR-680, you'll be very happy with it. If you want to take it for gentle walks, then buy the PortaBrace case and a decent high-capacity 12 volt rechargeable battery to go with it, although if you're using the ST0250 in B-Format mode, you won't be using phantom power so that should help. But if you want to use it to fend off rioters and muggers or, as the nice U.S. Customs man suggested "what is this, some kinda boat thing?" as an anchor, then the Sound Devices models are what you need. I did a sort-of 'Lovejoy' thing of buying in and selling on at a profit over the course of eighteen months to build up a cache of cash and then got very lucky with a mint-condition used 788T, with which I am deeply in love. I haunted the consignment sites of various audio traders and the for-sale lists on numerous web-sites and then it all fell very neatly into place a couple of months ago.
