My information comes from page 443 of Stocking Up III: America's Classic 
Preserving Guide by Carol Hupping and the staff at the Rodale Food 
Center.  The book refers to studies done at Pennsylvania State 
University.  Unfortunately, that is all the information it gives.  I 
quoted off the top of my head, it should have been 30 days in the 
freezer, not 90.  Sorry.

Hakan, please send me you salmon recipe.  I have a brother in Vancouver, 
Canada and we regularly trade, one wild salmon, flash frozen within 15 
minutes of being caught for a 3 month old, milk fed piglet, properly 
dressed.  I am always looking for recipes to do the salmon justice.

I too, quit hunting when it was either I go by myself or with jerks that 
thought booze and guns go together.  When I was on campus [U of A], a 
girl sat and regaled everyone of with her stupidity with a gun and then 
wondered why we didn't want her to go target practicing with us.  Yikes. 
  Only once have I enjoyed killing an animal, and that was the last emu 
I shot.  Her mate had died, so she would not let anyone else in the pen 
mate, and she beat up on everyone, including trying it on me.  Hubby and 
I flipped a coin for the privilege, that time.

All of this talk about mad cow really enforces my desire to eat nothing 
but grass fed meat.  I have enough health problems, I don't need 
anymore.  I am hoping to get a dairy calf this year, but it is difficult 
to find one that still has enough teats to milk by hand.
