Microwave radiation changes the structure of water? How so? Water is a polar molecule and therefore responds to rotating magnetic fields. The RF fields inside the microwave oven cause the water molecules to spin in resonance with the microwave frequency. Molecular movement is synonomous with heat and that's the end of the story. Making molecules spin doesn't change their structure. Now radiolytic byproducts ....that's a different story, but water? Don't believe it.
