Set the 'required' option to false. Additionally you can overwrite the
label of the empty value in the template:
{{ form_widget(form.mychoice, { 'empty_value': 'Please select a value...' }) }}

Yes. form.vars, form.field.vars etc. contain the template variables of
each object, amongst them: "id", "name", "value", "required" etc.
That is
{{ form.vars.id }}
{{ form.field.vars.id }}
{{ form.field.vars.value }}
etc.
