AIUI, our only "sign out" UI will be hosted remotely via about:accounts, and only exposed via the "manage account" link in the Sync prefs UI. I think this is quite "buried". I'm not sure changing the phrasing from "Sign out" would make sense, given where it appears, but maybe we can figure something out to better communicate what is happening.
