The problem with that is I don't think a lot of those things are
mapped by most OSM'ers... I was thinking more along the lines of
highlighting walking/cycle paths and bush tracks and either removing
other features or at least making them more washed.

There is a couple of hiking styles on the wiki:

But to me these seem to be too noisy...
