For trail surveys and other GPS recording on Android I've been very happy with Google's "My Tracks" app: https://play.google.com/store/apps/details?id=com.google.android.maps.mytracks&hl=en

The original question was about iOS, about which I know nothing.

But on Android, I've been quite well pleased with BackCountry Navigator PRO GPS. There's a free demo, and the real app is $12 if memory serves. It offers several decent topo map services, plus more that you pay for. It runs well without a network connection (it lets you download the base map in advance), which is perfect for those backcountry trails that lack cell service.

I do my own maps for it, using Mapnik of course! http://kbk.is-a-geek.net/catskills/test3.html is a sample of what's possible.

My biggest mapping project to date with it has been http://www.openstreetmap.org/relation/4286650 - every step of that trail is checked against my GPS logs from BackCountry Navigator.
