Oh no, I think it is not so easy. You need matching rules in your style-files 
for sea and land!
Then you have to make sure, that the sea is the first polygonlayer that is 
drawn and the land is the next one. (I specified it in my typfile, but frederik 
has none)

The 2 rules on my polygon-style look like:
natural=sea [0x32 resolution 10]
natural=land [0x27 resolution 10]

0x32 is the default garmin sea type and maybe it works, but I don't know if 
there is a default landtype.
For me it doesn't matter because I define it in my typfile.

So I would not suggest Frederik to use this option without some testing of the 
result map!
