Let me make you happy: you can!! (At the price of losing
space in the upper and lower window in the View Folder
window.

Open a folder so that you get the "View folder [folder
name]" window. Go to View --> Message Headers. Tick *all* of
them. These will show in the gray box between the folder message
list and the actual message (but do expect that gray box to
become unmanageably big). You may need to do the same in
your preview windows.

That way, yoo'll see all header and yet they won't be
included when you hit reply.

If this method makes the gray (header) box take up too much
space, there's another work-around:

*Select* what you want to reply to (i.e. parts of the
original text) and then hit F4. Now, only what you selected
will be included in your reply.
