It's rather easy.

Incoming filters are triggered when the condition is met on an
incoming message.

Outgoing filters are triggered when the condition is met on an
outgoing message.

Read filters are triggered when the condition is met on a message that
you've just read (and that is AUTOMATICALLY changed from unread to
read). The source directory matters very much here.

Replied filters are triggered when the condition is met on a message
that you've just written a reply to. The source directory matters very
much here.

Selective download filters are only being used with the mail
dispatcher.
