Found it - right-click on one of the column headings when viewing that folder, then select message list columns and tick "expand all threads". Quite effectively hidden (since I do not see expanding/collapsing threads as a column setting) and I fail to see how I could have inadvertently changed that setting, short of the cat walking across the keyboard.
