I wouldn't consider RAID for a child's machine. I would have an OS that
could be trivially installed.
Count on getting viruses / screwups and plan for a speedy recovery.

I would get a motherboard with on board video, and then if the video
failed, I'd install a separate video card. That'll reduce your upfront
purchase cost.

I think 8GB RAM is enough for the next years. You'd probably get by on 4GB
or even 6GB. I'd only consider 16GB if your 5 year is creating and editing
hi def video.

Older motherboards are generally more stable, reliable and likely to pose
less integration and driver issues.
