The Eudora mail client allows this. I believe Thunderbird does, too. Possibly the Zimbra Web client. Hmmm. Zimbra allows different personae, but I'm not sure about the catchall accounts on the back-end. Mutt, of course, allows you complete control over the header lines up to the moment you send the message.
