If I understand you right the 'done' button must have been lost either by deleting the following - or parts of it - from the EditTemplate: <div class='toolbar' macro='toolbar ToolbarCommands::EditToolbar'></ div> - or something from the ToolbarCommands tiddler: |~EditToolbar|+saveTiddler -cancelTiddler deleteTiddler| - or the equivalent of a systemTheme tagged tiddler.
For such cases it comes very handy to have TidIDEPlugin installed, or ready to use as a bookmarklet: http://www.tiddlytools.com/#TidIDEPlugin It allows to edit and save tiddlers bypassing the regular 'done' command. One way without plugin to correct such a mistake is to import all tiddlers in a empty TW again - exept the offending ToolbarCommands or ViewTemplate tiddler, and carefuly adapting the left out tiddler again.
