alex999 what you need is the module called product_variant_multi from extra addons. That's not a "package" thing but it allows dealing with multi-axial variants. Thus you can have one dimension + several values for the wheel, one other dimension for the frame...
Now a combinations of dimension values will determine a single product reference that will be a bike (much like a configurable PC in the demo data) and such a single product reference will have a unique bill of material (possibly cascading and reusing generic bill of material). We recently improved product_variant_multi a lot to meet such needs:https://code.launchpad.net/~openerp-commiter/openobject-addons/trunk-extra-addons Along with that we are also developing yet an other module to deal with adhoc customisation operations in the mrp.operation, you might need that too, but I'm afraid this part is less generic. This will fix the inventory + assembling I think. Now you probably want a product configurator. Well, we are developping one that will be contributed back within say a month. I don't know if you will be able to use it out of the box for your case or if you'll need to customize it. Hope this helps.
