Regarding initial questions, ubuntu and suse have been suggested. IIRC, 
ubuntu-server allows to install only the basics, Suse, I don't know but very 
likely.
My recommendation is to use a mininal environment : no graphical display, no 
general purpose server pre-installed, just the dependencies and OpenERP code. 
Getting OpenERP from a minimal system is a matter of ten to fifteen commands, 
and it will be there for years. 
Whichever linux distro you choose, most of these commands are likely to be very 
similar and often the same ones.
You'll learn about initial commands faster than mastering a complete new 
desktop.
