Hi

Following up on Chris's clue, I found what is called a "Wundt style 
chronograph" at (see left-most image at top):

Perhaps this would be a reasonable approximation to Donders' device?  I'll 
probably substitute it for the Hipp Chronoscope I currently use in lectures on 
this material.  Unless someone finds something better??

No. My understanding is that he used a kymograph-based chonograph 
instead. See David Robinson's chapter on reaction time work in Rieber & 
Robinson's _Wilhelm Wundt in History_. Also see Benschop & Draisma's
