Regarding literature related to psychology:

There is an old anthology of science fiction edited by Katz,
Greenberg and Warrick in the 1970's. It is likely hard to get
and a bit outdated but it has chapters on development psychobiology,
sensation and perception, learning, social processes, personality,
abnormal and therapy. It includes such authors as Ursula Le Guin,
Ray Bradbury, John Brunner, J.G. Ballard, Robert Heinlein, Judith
Merril, Isaac Asimov, Robert Sheckley, Theodore Sturgeon
and Robert Silverberg.

This is an instance of where using something like the WorldCat
electronic catalog of library catalogs comes in handy. There are
two editions of Katz et al (which has been mentioned previously
on TiPS) and here's a listing on WorldCat for various versions:

http://www.worldcat.org/title/introductory-psychology-through-science-fiction/oclc/233663241/editions?referer=di&editionsView=true
Clicking on a title identifies which libraries have a copy -- then
let interlibrary loan do the rest.
Note: the 1974 edition's WorldCat entry has a listing of the
contents; see:
http://www.worldcat.org/title/introductory-psychology-through-science-fiction/oclc/944077?referer=di&ht=edition

I should point out that there is another volume of science fiction
stories for use in psychology with the title "Psy-Fi One"; see:
http://www.worldcat.org/title/psy-fi-one-an-anthology-of-psychology-in-science-fiction/oclc/2646307&referer=brief_results

Note that the WorldCat entry for "Psy-Fi One" has a listing of the
table of contents.

It should be said that how literature and/or stories relate to psychology
depend upon one theoretical view of psychology and, quite possibly,
the metaphysical assumptions one is willing to make about human
nature.

Finally, I'd like to suggest a couple of readings:

Paddy Chayefsky's novel "Altered States" (Ken Russell did such an awful
job of translating Chayesky's book into a movie, Chayefsky had his
name taken off as screen writer so don't use the movie -- it really sucks).
For the novel, start with its entry on books.google.com:
http://books.google.com/books?id=lnNaAAAAMAAJ&q=%22altered+states%22&dq=%22altered+states%22&hl=en&sa=X&ei=cfB1UYuJAoni4AOyiYDgBQ&ved=0CDIQ6AEwAA

Another reading is the short story "Flowers for Algernon" which was turned
into the movie "Charly" and related novel; see the Wikipedia entry:
http://en.wikipedia.org/wiki/Flowers_for_Algernon
The movie version is good but the short story and novel might be better.
