Well, for outgoing mail, you coud use tmda-ofmipd[1], wich is exactly what you are looking for: a proxy that allows one to centrally tag messages. It listens on a free port, tags the message, and hands it over to the mta. However, not running on the default port 25, you need to set up all your clients to use that port. Or, you coud use two separate IPs, bind your MTA to one of them, and tmda-ofmipd to the other. Or do some other routing magic, like portforwarding packets whose destination is port 25, and came from localnet. For incoming mails you could just set up procmail, for eg.
