You tried going to My Music on the Touch itself? If My Music does not see your SBS server... On the SBS server go to Control Panel > Diagnostics, what is reported for ALL pings, ports, IP's? On Touch go to Settings > Home Menu, select Switch Library. Now on Touch's Home Menu try Switch Library, hopefully your SBS will be seen.
