dbPowerAmp is an excellent program and offers many ways to customize how songs are tagged. In addition to dbPowerAmp I would recommend the free program mp3tag (http://www.mp3tag.de/en/) which also many very powerful tagging tools.
While LMS uses very basic tags, as outlined by Osamede in the previous post, the kinds of detailed metadata you are interested in are pretty much not available in any online database so will have to enter all that data by hand. Again mp3tag can handle manual tag editing, including custom fields and tags. In order to have LMS handle these custom tags I suggest that you look into several of the LMS plugins available which give LMS this ability. Custom Browse is very popular and very well supported.
