I would recommend you install the standard ISO with Gnome-fallback for your system. If you really want mate you can install it, many trisquel users use mate.
Trisquel has its own browser called a-browser, and it also has the firefox add ons in its own "add-on site" when you search for addons within the browser. But you can install w/e addon you want.
