It is not a matter of what we do but what you want and which security and
privacy you want. And also who you trust.
We have tried to make Tryton as secure as possible but like for any software
you don't have any garantee to be vulnerability free.

I don't think you are required to have your data inside your building.
Otherwise there will not be fiduciaries.

Desktop applications are fine when there is only one user but as soon as you
have more than a client-server is far better. But you can put the server where
you want.
