This is right up there with the week of U2 on the Late Show.
Fallon also had Christopher Cross ("Sailing", "Arthur's Theme") on his show, so
I don't think he gives a crap about target audience where musical guests are
concerned.
Arguably the same could be said of having the surviving Python members on, but
that's a better example of Fallon being completely unable to control his show.

Subject: [TV orNotTV] Article with a headline containing the words "Fallon"
and "classy"
Ignoring the premise that Jimmy Fallon would know "classy," the odd
bit is at the end of the story. A week of "Late Night" devoted to The
Rolling Stones? I never know what the target audience is supposed to
be in a given show, but I can't imagine too many college kids jumping
for joy at the thought of Mick Jagger in a comedy sketch. Don't get me
wrong, I'm glad Fallon is trying something different, but I just don't
see a week of Stones translating into huge ratings.
