The official word seems that Chelsea opted not to do a third season.  I find 
it plausible that given her big deal with Netflix (specials, documentary show 
and talk show), she may have been given the option to end the show rather than 
be cancelled.

Unlike the other programs, Chelsea ran three episodes a week during its first 
season, typically taped the day before dropping.  The next season was a weekly 
affair.  120 episodes in all.
