LIPIcs describes how they calculated their publishing costs at https://www.dagstuhl.de/en/publications/lipics/processing-charge/ , and LMCS ( https://lmcs.episciences.org/ ) is now using a publicly-funded OA publishing platform, so they may actually have no costs at all.)
